f233 nGal d 1 Ovomucoid, Egg
Allergens within Food of Animal Origin
Ovomucoid, Gal d 1, is a major allergen of hen's egg.
Review
Ovomucoid, Gal d 1, is, together with conalbumin, the major allergenic protein in hen's egg. The highest concentration is found in egg-white. The molecular weight is approximately 28 kD.
Studies on serum samples with elevated levels of IgE antibodies to ovomucoid (Pharmacia CAP System™ RAST® FEIA) showed that ovomucoid is a highly glycosylated protein with five IgE binding regions in three domains. The epitopes are conformational rather than linear and the carbohydrate moieties have only a minor effect, if any, on allergenicity (1).
